Cheesy Leftover Mashed Potato Pancakes Recipe

I think I have died and gone to heaven. My hubby made these for breakfast as we had chicken and mash potato for dinner last night and had a lot of mash potato left over, I told him to throw it away but he said he had a surprise for me in the morning.

I am so happy I didn’t throw the mash away behind his back because I think I just ate the most enjoyable and delicious breakfast I have ever had. We added bacon and sausage with a little gravy. Yummy. Check it out and put your leftover mashed potatoes to good use.
